Aodhan and I had a great time building this dessert. It is wonderfully hands-on for the 2+ age, and oh so tasty. To make this dessert an option for our whole family, Aodhan and I made it gluten-free as well as vegan – and the results were divine.
- about 8 chocolate gf & v cookies (of course you could make your own from scratch)
- 1 box of silken tofu
- 2 TBS ground flax seeds
- 1 banana
- 2 TBS of vanilla
- plastic bugs and lizards
Aodhan peeled the banana and we whizzed it up with the immersion blender. We added the tofu, vanilla and flax seeds and whirred it up again.
Next, we filled a ziploc bag with the cookies and Aodhan smashed his heart out.
We reused some old yoghurt pots and filled them first with the pudding, adding the crumbled cookies to the top.
Obviously, the funnest part was adding the bugs and serving them to his dad after dinner!
