Aodhan and I had a great time building this dessert. It is wonderfully hands-on for the 2+ age, and oh so tasty. To make this dessert an option for our whole family, Aodhan and I made it gluten-free as well as vegan – and the results were divine.

We used:

  • about 8 chocolate gf & v cookies (of course you could make your own from scratch)
  • 1 box of silken tofu
  • 2 TBS ground flax seeds
  • 1 banana
  • 2 TBS of vanilla
  • plastic bugs and lizards

Aodhan peeled the banana and we whizzed it up with the immersion blender. We added the tofu, vanilla and flax seeds and whirred it up again.

Next, we filled a ziploc bag with the cookies and Aodhan smashed his heart out.

We reused some old yoghurt pots and filled them first with the pudding, adding the crumbled cookies to the top.

Obviously, the funnest part was adding the bugs and serving them to his dad after dinner!

Oh I like this–I avoid “pudding” for my little one, but I think I can use your basic idea and got with it! Thanks!

  2. When I did something similar with kids at an afterschool program, it was such a hit. Kids always love turning the cookies into dirt!

I’m always looking for healthy treats for my son! I’m a vegetarian/health food enthusiast :) and try to limit sweets that my toddler has. I’m featuring this on my post for the Weekly Kids Co-op tomorrow! Thanks for sharing…
